This, for example, might allow one copper still to be lined up in preparation, whilst the other is in use, meaning no downtime. The whole operation keeps moving smoothly, and distillery managers now have the ability to make smarter decisions when things might change (which we all know they do).

Scotch must mature in oak casks no larger than 700 litres and it must do so on Scottish soil. From ex‑bourbon barrels to oloroso butts, oak’s tannins and lignins have a role to play with Scotch’s unique flavour.
